Sadly it is not possible to delete or reset an account, as it's completely linked to your device account. If you want to begin a new account in the game, you need to delete the game, log out from your Google or Apple account on the device, log in with a new or different Apple or Google account, and just then re-download the game. When you access the game, you will begin a new account.
